Last week I was able to make it to Costco on a day where the line was short. This was my first time back at Costco since before Lock Down 2020 became official. One of the items that I grabbed during my shopping spree was a bag of sweet potatoes because I love making baked sweet potato fries. The fries are great, but I wanted to make something that packed more nutritional punch. I decided to make try home fries for the first time and it was delicious. They make a great side for any meal any time of day. Lately, I’ve been obsessed with putting them in my veggie bowls.
Ingredients:
- 3 large sweet potatoes – cut in to 1 inch cubes
- 1 red bell pepper – diced
- 1 medium yellow onion -diced
- 3 cloves of garlic -minced
- 1 tablespoon of extra virgin olive oil
- 1 teaspoon of salt (or salt to taste)
- 1 teaspoon of ground black pepper
- 1 teaspoon of thyme
- 1 teaspoon of sage

Directions:
- Step 1: Preheat oven to 450 degrees.
- Step 2: Mix all of your ingredients so that the potatoes are all covered evenly.
- Step 3: Pour everything onto a sheet pan making sure that no potatoes are on top of each other.
- Step 4: Place your sheet pan in the oven and bake for 15 minutes.
- Step 5: Flip your potatoes so they brown on both sides, and put back in the oven for another 15 minutes.
- Step 6: Pull them out of the oven and taste one to make sure it is cooked through and delicious. Let cool for 5 minutes.
- Step 7: Enjoy!
I also sometimes add sauteed baby bella mushrooms to this dish at the end to add to the nutritional value, it also adds a little meaty texture. Feel free to skip if mushrooms are not your thing.
